What are birria tacos?

For birria
- Short ribs or oxtail = 1 pound
- Boneless chuck = 2 pounds
- Neutral oil such as vegetable/ avocado oil = 1 teaspoon
For sauce
- Guajillo chiles = 7
- Arbol chiles = 3
- Ancho chiles = 7
- Garlic cloves = 6
- White onion = 1
- Roma tomatoes = 4
- Ground cloves = ¼ teaspoon
- Coriander seeds = 1 teaspoon
- Mexican cinnamon = ½ stick
- Black peppercorns = 1 tablespoon
- Apple cider vinegar = 1 teaspoon
- Beef broth = 3 cups
- Bay leaves = 3
- Mexican oregano = 1 teaspoon dried
- Cumin seeds = 1 teaspoon
For tacos:
- Lime juice = 1 lemon
- Minced cilantro = ¼ cup
- White minced onion = ¼
- Oaxacan or mozzarella cheese = 3 ounce
- Corn tortillas
- Kosher salt
How to make birria?
Step 1
Take the meat and marinate it with salt according to your taste.
Step 2
Put the meat in a big pot that has oven proof lid. Place the meat in the oven at medium to high heat. You might have to do it in chunks but make sure that heat is provided to the meat pieces from both sides for about 3 minutes. Now change the position of the meat and heat the remaining areas of the meat.
Step 3
Now, add tomatoes, spices, chillies, garlic and onion to a pot and mix it well. Now put the water in this mixture and stir it for 20 minutes. You will see after 20 minutes that the chillies and tomatoes get softened than before.
Step 4
Remove it and put the whole material in the blender, and add two cups of the meat broth to it. Now blend the all mixture well.
Step 5
Now, keep the meat in the huge pot and add the sauce to it. Add one cup of meat broth in the blender again to get the forth above, it would give more sauce. Now pour it into the pot and give a light boil to it, then cover it with the lid. Put the pot in the oven and then lightly fry it for up to 3 hours, till the meat is not shredded.
How to make birria tacos?
Step 1
Keep the meat separate from the sauce and shred it into little pieces.

Now pour some of the sauce into a bowl and thin it with beef broth if necessary.

In a shallow dish, combine minced onion and parsley with several squeezes of fresh lemon and a sprinkle of salt.
